This is a lovely runny honey with a floral flavour. The honey comes from an apiary at the foot of Box Hill, near Dorking, Surrey.
All pure honey naturally crystallises and granulates over time. This is a sign of the quality and it is still fine to eat. Some people prefer this sort of set honey, which is much easier to spread on toast. Some honeys set quicker than others, for example if the bees have been foraging on rape flowers it will normally set more quickly. Return granulated honey to its liquid state easily by gently heating the jar in warm water after loosening the lid, but it is important not to overheat or boil the water. Alternatively place the jar in a warm location for 24 hours. Do not use water hotter than 45°C or this will damage the enzymes in the honey.
We normally add a best before date to our honey two years from the date it was extracted from the hive. Store it at room temperature, so it will be fine kept in a cupboard, larder or other cool, dark, dry place for many months. Once opened do not refrigerate your honey as this will cause granulation and it will set more quickly.
Babies and children
Do not give honey to children under the age of 12 months because there is a small risk of infant botulism if there are bacteria present. After this age the risk is reduced, but do remember that honey is a sugar so it should not be eaten to excess.
